ABOUT US
Loba Pâtisserie is a four-hands pastry project. We are Cris Massana and Martina Sampaolo, vegan pastry chefs, co-founders of Loba, and pastry consultants.
Pistachio-Raspberry tart:
Tarts are perhaps the most complete desserts in pastry, combining various textures and flavors that merge in a single bite. In this course, we will create seven different recipes together, which will be the components of our tart but can also be used in many different applications.
- Almond sablé
- Pistachio frangipane
- Raspberry compote
- Pistachio cremeux
- Pistachio chantilly
- Raspberry coulis spheres
- Raspberry gel
The base will be an almond sablé, which will be filled with a pistachio frangipane, traditionally an almond cream but adapted here with pistachio. We will include a raspberry compote for freshness and acidity, and a pistachio cremeux: a creamy, smooth French preparation similar to ganache but without chocolate. The tart will be finished and decorated with a soft pistachio chantilly, fresh raspberries, and an element that always impresses: raspberry coulis spheres. The entire process will be demonstrated and partially carried out by the students themselves, making it suitable for all levels.
